Traditional Chinese Medicine (TCM) has used food as medicine for thousands of years. Congee is basically a rice pudding, it is thought to promote warmth and support digestive fire thereby assisting with optimal nutrient absorption.
1. Place all ingredients into a large saucepan.
2. Cover with a lid and bring to a boil.
3. Once boiling, reduce the heat to low-medium and allow to cook for 1 hour. Stir regularly to prevent sticking.
4. Serve and enjoy.
