Sweet Breakfast Congee

Traditional Chinese Medicine (TCM) has used food as medicine for thousands of years. Congee is basically a rice pudding, it is thought to promote warmth and support digestive fire thereby assisting with optimal nutrient absorption.
INGREDIENTS

  • 1 cup black rice
  • 5 fresh medjool dates (pitted)
  • 5 cardamom pods
  • 2 cinnamon sticks
  • 7 cups water
  • ½ cup goji berries
1.  Place all ingredients into a large saucepan.
2.
Cover with a lid and bring to a boil.
3. Once boiling, reduce the heat to low-medium and allow to cook for 1 hour. Stir regularly to prevent sticking.
4.
Serve and enjoy.
  • Serve warm with coconut yoghurt.
  • Storage: In an airtight container in the fridge for up to 3 days. Can be reheated in the microwave before eating.
