Rocky Road

Even the most inexperienced cooks will LOVE our Rocky Road. We have created the perfect sweet treat! Our homemade Rocky Road includes selenium packed Brazil nuts, zinc rich pepitas and even more antioxidants from goji berries. Please note that chocolate does contain caffeine and this snack will contribute to your total daily caffeine intake.

  • 1 block 70% (or above) Dark Chocolate 
  • ¼ cup Brazil nuts (chopped) 
  • ¼ shredded coconut 
  • ¼ cup goji berries 
  • ¼ cup pepitas 
1.  Place chocolate in a microwave safe bowl and microwave for 1 minute to melt. Stir well. 
2.  In the same bowl, add in the remaining ingredients and mix through until all ingredients are coated in chocolate.
3.  Line a baking dish with baking paper, place in the mixture and flatten using a spoon. 
4.  Place in the fridge to set for 2 hours or until firm and it doesn’t break apart. 
5.  Use a knife to chop into desired portions and enjoy!
