PEARL COUS COUS & SWEET POTATO SALAD

This recipe is delicious alongside any serving of protein. It contains our Superfood Pesto which is high in healthy fats and antioxidants. Couscous is a good source of fibre and selenium!

  • 1 sweet potato (peeled & diced)
  • 1 red onion (diced)
  • Extra virgin olive oil (EVOO)
  • 1 cup uncooked pearl couscous
  • 2 cups baby spinach
  • ¼ Mothers Mylk Superfood Pesto
1.  Preheat the oven to 180°C fan-forced.
2.  Drizzle the sweet potato and red onion with EVOO and place onto a lined baking tray to bake in the oven for 25 minutes. 
3.  Meanwhile, cook the couscous as per package instructions. 
4.  Once the vegetables are cooked, place all the ingredients into a large salad bowl and mix to combine well.
