2. Drizzle the sweet potato and red onion with EVOO and place onto a lined baking tray to bake in the oven for 25 minutes.
3. Meanwhile, cook the couscous as per package instructions.
4. Once the vegetables are cooked, place all the ingredients into a large salad bowl and mix to combine well.
