Homemade Granola

An easy homemade granola which contains protein, healthy fats and antioxidants. Making your own is an easy way to avoid store bought varieties, which are often packed with sugar and other additives.

  • Dry Ingredients:
  • 1 cup raw buckwheat buckinis (or in place, use rolled oats) –
  • 1/3 cup pepitas 
  • 1/3 cup sunflower seeds
  • 1/3 cup shredded coconut 
  • 1/3 cup almonds 
  • 1/3 cup walnuts 
  • 1/2 cup goji berries 
  • Wet Ingredients:
  • ¼ cup coconut oil (melted)
  • 1 tsp vanilla bean extract
  • 3 tbsp honey 
1.  Preheat the oven to 100°C fan-forced and prepare a baking tray with baking paper.
2. Mix all the dry ingredients into a medium-large bowl (except for the goji berries).
3. In a separate bowl, whisk all the wet ingredients together.
4. Add together the wet and dry ingredients and mix until the dry ingredients are completely coated.
5. Evenly spread the granola onto the prepared baking tray and bake for approx. 30 mins.
6. Remove from the oven and allow to cool completely then mix in the goji berries.
  • Serve with milk of choice, yoghurt and fresh fruit.
  • Vegan option: Use maple syrup instead of honey. 
  • Storage: In an airtight container in the cupboard for up to 1 week.
