1. Preheat the oven to 180℃ fan-forced.
2. Cut the sweet potato into chip size wedges and place on a baking tray.
3. Coat with extra virgin olive oil and season with salt.
4. Bake in the oven for approximately 35-40 minutes.
5. Mean while, to make the guacamole, mix all the ingredients in a small bowl.
6. Serve with the cooked sweet potato fries.
