Holy Guacamole

This guacamole is packed with antioxidants and bursting with flavour. Small changes like including red onion, cherry tomatoes and coriander makes it easy to get more nutrients into your diet. INGREDIENTS
METHOD
  • Sweet potato fries: 
  • 3 Sweet potato
  • Extra virgin olive oil 
  • Salt
  • Guacamole:
  • 4 ripe avocados (mashed)
  • 6 cherry tomatoes (diced) 
  • ½ bunch coriander (diced) 
  • ½ red onion (diced)  
  • Juice 1 lemon 
  • Salt & pepper to taste
1.  Preheat the oven to 180℃ fan-forced. 
2.  Cut the sweet potato into chip size wedges and place on a baking tray. 
3.  Coat with extra virgin olive oil and season with 4.  salt.
Bake in the oven for approximately 35-40 minutes. 
5.  Mean while, to make the guacamole, mix all the ingredients in a small bowl.
6.  Serve with the cooked sweet potato fries.
