Healthy Apple Crumble

When the weather cools down and you want a nourishing and warming treat to satisfy your sweet tooth, this apple crumble is the perfect option. Oats have been traditionally used to support breast milk production. We recommend always using rolled oats, which are high in fibre and help to balance blood sugar levels.

  • Filling:
  • 4 apples (sliced or diced)
  • ¼ cup almond milk
  • 1 tsp cinnamon
  • 1 tbsp maple syrup
  • 1 tsp vanilla bean extract 
  • Crumble:
  • 1 cup rolled oats
  •  1/3 cup mixed almonds & pecans (roughly chopped)
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • ½ cup shredded coconut
  • 2 tbsp coconut oil (melted)
  • 1 tsp vanilla bean extract 
1.  Preheat the oven to 160°C fan-forced.
2. In a medium bowl, add the apples and coat with almond milk, cinnamon, maple syrup and vanilla bean extract.
3. Transfer coated apples to a small-medium baking dish and evenly layer.
4. Using the same bowl, add all the ingredients for the crumble and mix to combine.
5. Cover apples evenly with the crumble mix and bake for 20-25 mins or until golden on top.
  • Suggested toppings: Fresh berries, coconut yoghurt or coconut ice cream
  • For extra soft apples, steam on stove top for 8-10 mins or until soft before transferring to the baking dish.
