Lamb is a wonderful source of iron and B12! The addition of the marinade in this recipe provides a simple way to add lots of flavour and tenderise the meat. We always recommend making your own marinades to reduce the use of preservatives, additives and excess refined sugar.

6 lamb chops

3 sprigs of fresh rosemary (removed from stem)

½ bunch mint (finely chopped)

2 tbsp honey

1 tbsp apple cider vinegar

4 tbsp olive oil
1. Combine all ingredients (except the olive oil) together and marinate the lamb for 2-4 hours in the fridge.
2. In a skillet, heat the extra virgin olive oil on medium heat and cook the lamb for approximately 7 minutes on each side.
