1. Preheat the oven to 180°C fan-forced.
2. Chop the cauliflower into small florets and place onto a baking tray.
3. Drizzle with EVOO and cinnamon and place in the oven to roast for 25 minutes.
4. Remove cauliflower from the oven and transfer to a salad bowl
5. Toss through remaining ingredients and enjoy!
