Pumpkin & Cranberry Salad

This salad is boosted with antioxidants and fibre! It is the perfect side salad to our delicious whole roasted chicken. Pairing it with the roast chicken will create the perfect balanced meal with protein, healthy fats, complex carbs and fibre.
INGREDIENTS
METHOD
  • For the salad:
  • ¼ pumpkin (diced)
  • Extra virgin olive oil (EVOO) 
  • ¼ cup cranberries
  • ¼ cup pine nuts
  • ¼ bunch parsley
  • 1 cup rocket 
  • 1 cup baby spinach
  • For the dressing:
  • 2 tbsp extra virgin olive oil (EVOO)
  • 1 tbsp lemon juice 
  • 1 tsp honey
1.  Preheat your oven to 200°C fan-forced.
2.  Place the diced pumpkin on a lined baking tray and coat with EVOO.
3.  Bake in the oven for 20 minutes or until slightly golden. Once cooked, remove from the oven and set aside to cool slightly for 5 minutes. 
4.  Meanwhile, in a small bowl add in the dressing ingredients and whisk until well combined. 
5.  Place all of the salad ingredients into a large salad bowl and drizzle over the dressing. Use tongs to mix.
