1. Preheat your oven to 200°C fan-forced.
2. Place the diced pumpkin on a lined baking tray and coat with EVOO.
3. Bake in the oven for 20 minutes or until slightly golden. Once cooked, remove from the oven and set aside to cool slightly for 5 minutes.
4. Meanwhile, in a small bowl add in the dressing ingredients and whisk until well combined.
5. Place all of the salad ingredients into a large salad bowl and drizzle over the dressing. Use tongs to mix.
