1 cup rolled oats
½ cup shredded coconut
4 tbsp brewers yeast
¼ cup flaxseed meal
12 fresh medjool dates (pitted)
½ cup peanut butter or almond butter
1 tsp vanilla bean extract
½ cup dark chocolate chips or goji berries
1 scoop protein powder (optional)
1. Place all ingredients (except for the dark chocolate chips or goji berries) into a food processor and process on high until well combined. 2. Add in the dark chocolate or goji berries and gently process on low until they are mixed through but not crushed. 3. Scoop 1 heaped tablespoon of the mixture and roll into 12-15 even sized balls
Dark chocolate does contain caffeine. It is recommended to limit caffeine consumption to a maximum of 200mg daily during pregnancy and whilst breastfeeding. Source: foodstandards.gov.au
Not breastfeeding:Omit the brewers yeast. Some protein powders may contain dairy (why or casein), soy, gluten or eggs.
Storage:In an airtight container in the fridge for up to 5 days.
