Home-Roasted Vegetable Chips

An easier way to eat vegetables in the first trimester! It can often be hard to stomach fresh vegetables during the first trimester and if this is something you are struggling with, roasting vegetables with EVOO and a little sea salt is a great way to keep them in your diet! 
INGREDIENTS

  • ½ pumpkin 
  • 1 sweet potato
  • 1-2 potatoes
  • Extra virgin olive oil (EVOO)
  • Sea salt 
1.  Preheat the oven to 180C°C fan-forced. . 
2.  Wash vegetables well and remove skins using a vegetable peeler or knife. Wash again after peeling if required.
3.  Slice the vegetables into “chip shape” pieces and season with a good drizzle of EVOO and sea salt.
4.  Place into the oven and roast for approximately 25-30 mins, until slightly soft and golden.
  • If you're feeling up to it, season with spices of choice. Our favourites are such as cinnamon, oregano, thyme and rosemary! 
  • If you’re feeling up to it, add some poached or roasted chicken.
