GINGER SPICED PEANUT BUTTER COOKIES

Packed with protein rich peanut butter these cookies will give you a little sugar hit while still providing you with nutrients. When you're craving something sweet these spiced cookies are the perfect warming and nourishing treat. We know they can be addictive so just a reminder, everything in moderation!
INGREDIENTS
METHOD
  • Dry Ingredients:
  • 1 tsp ginger powder 
  • 1 tsp cinnamon powder
  • ¼ cup buckwheat flour 
  • ¼ cup rolled oats 
  • 1 tsp baking powder
  • 5 dried Turkish figs (diced)
  • ⅓ cup coconut sugar

  • Wet Ingredients:

  • 1/2 cup peanut butter
  • 1 egg (whisked)
1.  Preheat the oven to 180°C fan-forced. 
2.  Combine the dry ingredients into a large bowl and mix.
3.  Add the wet ingredients and mix until well combined and a cookie dough consistency is formed. 
4.  Roll into 10-12 even sized cookies and place on a lined baking tray. 
5.  Bake for 12-15 minutes until slightly golden.
