FROZEN YOGHURT BARK

A high protein snack packed with antioxidant rich berries. This frozen yoghurt bark is the perfect afternoon snack or dessert. 
INGREDIENTS
METHOD
  • 1 cup greek yoghurt 
  • 1 tbsp honey or other sweetener of choice
  • 1-2 tbsp of goji berries
  • 1-2 tbsp frozen blueberries
  • 1 tbsp pumpkin seeds
1.  In a large bowl combine the yoghurt and honey and mix well. 
2.  Using a spoon spread a thick layer of the yoghurt onto a lined baking tray. 
3.  Sprinkle over goji berries, blueberries and pumpkin seeds. Top with a little extra honey if desired. 
4.  Place in the freezer for 2 hours to set prior to eating.
