CLEANER PANNA COTTA

A dairy free pana cotta recipe for those that need it! A delicious dessert with wholefood ingredients. Of course all desserts should be consumed in moderation however we love that pana cotta contains gelatin which is a pure protein source. Gelatin contains essential amino acids that assist with tissue building and repair, particularly within the gut.

  • 1 400mL can of coconut milk (works best with full fat) 
  • ¼ cup honey (or maple syrup)
  • 1 tsp vanilla bean extract 
  • 1 ½ tbsp gelatin 
  • ¼ cup cold water 
1.  Bloom gelatin in water by sprinkling 1 ½ tbsp of gelatin over ¼ cup water. Allow it to sit for 5 - 7 minutes. 
2.  In a small saucepan, add all ingredients except the gelatin and water and bring to a gentle boil. Reduce the heat to low for 2 minutes until lightly slimmering. 
3.  Add the bloomed gelatin mixture to the pan and mix until well combined.
4.  Pour the mixture evenly into 4 glass jars or glasses and cover with lid or cling wrap. 
5.  Set in the fridge for 1-2 hours. 
6.  Before serving, top with fresh berries and passion fruit. 
  • If you have gestational diabetes ensure you are monitoring your blood sugar closely when consuming foods like honey/maple syrup. There is a lower sugar content in this recipe however you can also sub the liquid sweetener for monk fruit sweetener which has less of an impact on blood glucose levels.
