Citrus Roasted Salmon

This citrus roasted salmon is the perfect weeknight protein! It is so easy to make and full of flavour. Salmon is a wonderful source of protein and omega-3 fatty acid DHA, which is essential for Mama’s and baby’s brain and nervous system health.

  • Ingredients:
  • 1 salmon side (about 800g of salmon or 800g of salmon fillets, bones removed) 
  • 1 orange (sliced)
  • 1 lemon (sliced)
  • Juice of half a lemon
  • 2 tbsp extra virgin olive oil (EVOO)
  • 1 tsp thyme
  • 1 tbsp honey
  • Salt & pepper to taste
1.  Preheat the oven to 180°C fan-forced.
2.  Place the orange slices and lemon slices in the centre of a lined baking tray. Top with the salmon, skin side down. 
3.  Place the juice from half a lemon into a small mixing bowl and add in the EVOO, thyme and honey. Whisk until well combined. 
4.  Brush the salmon with the lemon juice mixture and place into the oven for 18-23 minutes until completely cooked through. 
5.  Remove from the oven and serve immediately.
