Chunky Coconut Cluster

These chunky clusters make the perfect breakfast granola or topping for any smoothie or yoghurt bowl! They are low in sugar and carbohydrates making them the perfect lower sugar sweet treat! The combination of nuts and seeds means these clusters are packed with protein, essential fatty acids and fibre. Nuts are also a wonderful source of vitamin E for healthy skin!

  • Dry Ingredients:
  • 1 cup slivered almonds
  • 1 cup pecans (roughly chopped) 
  • 1 cup shredded coconut (preservative free) 
  • ½ cup pumpkin seeds 
  • 1 tsp cinnamon 
  • Wet Ingredients:
  • 3 tbsp honey or maple syrup
  • 3 tbsp coconut oil 
  • 1 tsp vanilla bean extract
1.  Preheat the oven to 150°C fan-forced.
2.  Place all dry ingredients into a mixing bowl and mix until combined. 
3.  In a small saucepan, add the honey (or maple syrup) and coconut oil and gently warm over a medium heat. Ensure to stir constantly until well combined.
4.  Add in the vanilla bean extract and stir through. 
5.  After 2 minutes remove from the heat and pour over the nut and seed mixture. Mix it all together until the dry ingredients are completely coated. 
6.  Evenly spread the mixture over a lined baking tray and place into the oven for 15-20 minutes to bake until golden. 
7.  Remove from the oven and allow to cool completely (this will help it set into clusters).
  • Storage: Glass airtight container in the pantry or fridge for up to 7 days
