Cherry Tomato Side Salad

Tomatoes are a fantastic source of vitamin C and folate. This side salad is a great way to boost your vegetable intake and ensure you meet your daily goal of 5-7 serves. During pregnancy, some women are more prone to experiencing reflux.   • 1 punnet of cherry tomatoes (halved)
  • Pinch of salt
  • ¼ bunch basil leaves
  • 1 tbsp extra virgin olive oil (EVOO)
  • 1 tsp balsamic vinegar
  • 1 tsp honey 
1.  Place the cherry tomatoes, salt and basil leaves into a bowl and use a fork to gently toss. 
2.  In a separate small bowl, whisk together the EVOO, balsamic vinegar, and honey and then pour over the tomato mixture.
3.  Gently toss again until combined and serve.
  • This recipe pairs perfectly with grilled fish or chicken.
