(we recommend garlic-infused)
6 cherry tomatoes (chopped into quarters)
3 fresh basil leaves (chopped)
Pinch of sea salt
2 cubes goats cheese
1-2 slices sourdough spelt or gluten free bread
1. In a medium bowl, combine a drizzle of EVOO with cherry tomatoes, basil leaves and sea salt.
2. Toast sourdough as desired.
3. Using a fork, smash 2 cubes of goats cheese over the toasted sourdough.
4. Top with the tomato mixture and enjoy.
Suggested Toppings: Poached eggs.
