Banana & Peanut Butter Granola Bars

We love these granola bars for an easy grab and go breakfast. The ingredients in these granola bars are high in fibre and provide a subtle sweet flavour. Traditionally, oats are known to support breast milk production.

  • Dry Ingredients:
  • 2 cup rolled oats
  • 1 cup pecans (chopped) 
  • 1/3 cup pepitas 
  • Wet Ingredients:
  • ¼ cup extra virgin olive oil (EVOO)
  • 2 overripe bananas (mashed)
  • ¼ cup honey
  • ½ cup peanut butter
1.  Preheat the oven to 180°C fan-forced.
2. Combine the dry ingredients together in a mixing bowl.
3. In a separate bowl, add the wet ingredients and whisk to combine well.
4. Pour the wet ingredients into the dry and mix until well combined.
5.
Line a baking tray with baking paper or EVOO and press the mixture into the tray.
6. Bake for 20-25 mins until golden. Enjoy.
  • Vegan option: Use maple syrup in place of honey. 
  • Storage: In an airtight container in the fridge for up to 5 days.
