PREGNANCY FRIENDLY BABA GANOUSH

An easy way to add more vegetables to your diet! This pregnancy friendly Baba Ganoush can be added to sandwiches, alongside falafels or served as a snack with vegetable sticks or delicious as a dip with our homemade roti bread. 
INGREDIENTS

TIPS & NOTES
  • 2 eggplants (halved)
  • 3 tbsp extra virgin olive oil (EVOO) + extra for drizzling
  • 1 clove garlic
  • ¼ cup cashews (soaked in water for 2+ hours to soften) 
  • 1 tsp cumin
  • 1 tbsp lemon juice
1.  Preheat the oven to 180°C fan-forced. 
2.  Place the eggplant halves onto a lined baking tray and give them a good drizzle of EVOO before place in the oven to roast for 25 minutes. 
3.  Remove eggplants from the oven and allow to cool enough so you can peel off the skin.  
4.  Place the eggplant and all remaining ingredients into a high speed blender and blend until smooth. 
  • To soften the cashews soak in 1 cup of water overnight or for a minimum of 2 hours prior.
  • Storage: In an airtight container in the fridge for up to 3 days.
