1. Preheat the oven to 180°C fan-forced.
2. Place the eggplant halves onto a lined baking tray and give them a good drizzle of EVOO before place in the oven to roast for 25 minutes.
3. Remove eggplants from the oven and allow to cool enough so you can peel off the skin.
4. Place the eggplant and all remaining ingredients into a high speed blender and blend until smooth.
