Apple & Berry Gummies

This is a simple recipe for homemade gummies using gut friendly gelatin. Gelatin is a pure protein source, which provides the body with a number of beneficial amino acids. These amino acids assist with tissue building and repair, particularly within the gut. 
INGREDIENTS
METHOD
  • 2 apples (washed & diced) 
  • 1 cup frozen mixed berries (organic when possible) 
  • 1 270mL can coconut cream
  • 1 tbsp honey or maple syrup
  • 3 tbsp gelatin powder 
1.  Place the apples and berries into a sauce pan and bring to a boil, reduce heat to simmer and allow them to begin to break down. This will take approximately 20-30 minutes, stir to prevent sticking. 
2.  Place the apple and berry mixture into a blender and add the coconut cream and honey or maple syrup and blend until smooth.
3.  Bloom your gelatin by adding 3 tbsp gelatin to ½ cup of water and gently mixing until a paste-like consistency is formed. 
4.  Add the apple and berry liquid back to the stove over a low heat slowly stir in the bloomed gelatin until well combined. 
5.  Pour the mixture into moulds and set in the fridge for 2 hours or until firm to touch and easy to remove from the moulds.
